SAVORY & STEAMY PULLED PORK STEW
2 pounds Sadler’s Smokehouse Pulled Pork
8 medium red potatoes, diced ½ inch
½ cup carrots, diced ½ inch
½ cup celery, sliced ½ inch
1 can (14 ½ ounces) diced tomatoes
1 medium white onion, finely chopped
1 can (14 ½ ounces) vegetable broth
1 tablespoon fresh garlic, minced
3 cups cooked rice
Servings: 6
Prep Time: 15 minutes;
Total Time: 2 hours, 15 minutes
In a stock pot over medium heat, combine all ingredients, except pork. Cover and bring to a boil. Reduce heat and simmer for 1 to 1 ½ hours until red potatoes and carrots are tender. Add pulled pork and continue simmering for 20 minutes. Serve stew over hot rice.
